Lemon and Basil Salad Dressing
One of the most difficult parts of challenging myself to not eating any processed foods is having stuff on hand. I mean, I can munch on a carrot, but I can't something to dip it in. But you can only eat so much hummus! And if you're looking to get in more vegetables, it is a great idea to have a healthy, homemade salad dressing on hand. You can ix it with a basic salad, dress some chickpeas with it, use it as a spread, etc... This salad has the healthy fat of the avocado to keep you full and fueled. And the flavors of the basil and lemon go perfectly to create a creamy and tangy salad dressing. If you wanted it to be more of a "dip" of you could omit the water, or add an additional avocado to thicken it up. It it a yummy and versatile dressing or veggie dip!
Ingredients: 1 ripe avocado 1/2 cup lemon juice 1/4 cup olive oil 1/2 cup water
2 tbsp red wine vinegar 3/4 oz basil 5 garlic cloves 1/2 tsp salt 1/2 tsp pepper pinch of red pepper flakes
Instructions: 1. Combine all of the ingredients except for the basil in a food processor. Press the blend/puree button. Keep on holding it down for 30-60 seconds. 2. Add the basil and hold the "chop" button down for 20-30 seconds. 3. Store in an air tight, lidded container and enjoy for up to a week. Enjoy!
