Sweet Potato "Nachos" with Pulled Pork and Pepper Jack


I saw a similar concept on Pinterest and thought I would give it a try. I'm definitely not going to use the word healthy; it is starch based and has two cups of cheese... But its a healified southwest nacho. It was quite yummy. The only thing I could see missing would be some sort of sauce. Maybe the chipotle ranch from my blog? Haha. The flavor combination was delicious. The sweet potatoes (I used Alexia's Chipotle Sweet Potato Fries) with the black beans, pulled pork, pepper jack cheese and cilantro were almost made to be cooked together. It didn't feel too heavy and also definitely checks the comfort food box. It also involves little skill, precision, prep or time. We will be making them again for sure! Serves 4-5

Ingredients: 1 1.25 lb bag of Alexia's Spicy Chipotle Sweet Potato Fries 1 1/2 cup pulled pork (I had some left over from a previous dish, you could purchase some or use chicken) 1 cup black beans 2 cups shredded pepper jack cheese 1/2- 3/4 cup diced jarred jalapeños 1 bushel cilantro

Instructions: 1. Preheat oven to 400 degrees. 2. Evenly spread the fries on a greased baking sheet or a silicone mat. 3. Bake the fries for 10 minutes, flip them and bake for another 10 minutes. They will cook for 20 minutes total before you add the toppings. 4. Evenly sprinkle the pork, black beans, diced jalapeños, cheese and then cilantro (probably in that order). 5. Bake for an additional 10 minutes. 6. Serve with chipotle ranch, another dipping sauce or none at all.
